
The weather has been so warm lately
I am literally bathing in my own sweat during days when I walk Malcolm to school
A dip in the pool to cool off the heat is like the perfect thing to do
But with a baby, simple thing like this can be tricky business
There are days when I just drop everything at hand
park myself at the pool and watch Malcolm play ‘diving’ while the baby sleeps peacefully under the shady tree
Then there are days when the mere thought of going out drains me
knowing that unfinished chores, rather than rest await me when I step back home
And so the other day, I decided to make some wholesome treats to help cool us down
We made Mango Sorbet with the half load of over ripen mangoes which I bought

They are surprisingly easy to make
And because the mangoes are in season, I could get really good ones at really cheap prices (which explains why I ended up with a load full)
These mangoes are so sweet, you can even skip the syrup part
Ingredients
4 mangoes peeled, seeded and cubed
3 tablespoon fresh lime juice
1 cup simple syrup (1/2 cup sugar cook over low heat with 1/2 cup water)
Methods
Place cubed mango in a food processor and puree
Pour in simple syrup and lime juice
Puree until smooth
Place in an ice cream maker
Freeze thoroughly
