Weekend Breakkie

It’s mid summer and we have been getting temperature in the high 30s with unrelentless sunshine until last weekend
We woke up to a huge piece of weather with no chance of the sun shining through and the temperature dipped to a low 20s

It drizzled the whole day and the weather kind of decided for us what we should do
No outdoor activities, no long distance driving as we were told the overcast stretched all the way to Birmingham and Florida (which means a few hundreds kilometres)

No struggle on whether I should beat the sunrise and go for a jog
No guilt to sleep in
And when I woke up, the husband was busy putting these together

He had made toasted sandwiches for everyone

And I was served a special punch of omega-3s loaded with protein, monounsaturated fat and fibre

It was such a royal treatment that I had to do this




And I ate up Wall E

      hey Pamela, here’s how … halved the avocado, dig out seed and 1/2 of flesh, crack an egg in it, sprinkle some salt and pepper, bake at 400 F for 20-25 min, garnish with your fav herbs and voila ! power breakfast…best if you have it after a jog !
